<LH>Duck L'Petebix Recipe
2 ducks
2 tablespoons chili powder
2 tablespoons salt
1 large apple
6 garlic cloves 
2 sage leaves 
2 teaspoons olive oil 
L'Petebix Sauce (recipe follows) 

1. Crush 4 cloves of garlic together
    with 1 teaspoon of olive oil
2. Rub garlic and oil mixture all
    over ducks
3. Sprinkle chili powder evenly over
    the each duck 
4. Cut 2cm slice in skin of ducks on
    both sides of breasts
5. Puree remaining garlic, sage and
    olive oil and fill slices in skin
    with mixture
6. Chop apple into 2cm pieces and
    stuff inside ducks
7. Bake at 350*F (175*C) for 1 hour and
    10 minutes for slightly rare ducks

Makes 4 servings


L'Petebix Sauce:
4 tablespoons mango chutney
2 tablespoons peach preserves
Juice of one whole orange
3 tablespoons of duck drippings from pan
1/4 cup of red wine

1. Put ingredients in saucepan and heat
    until alcohol simmers off, about 6
    minutes. Serve L'Petebix sauce over
    sliced duck breasts.

Makes about 1 cup.
